7646 version 4 Page 1 of 4 Collate, publish, and maintain specifications for food or related products Level 5 Credits 18 Purpose This unit standard is for people who are currently working, or who intend to work, in jobs which involve the collation of specification data, and publishing and maintaining specifications for food or related product production once collated. People credited with this unit standard are able to collate food and related product specifications, and publish and maintain food or related product specifications. Product specifications refer to a detailed description of the ingredients, the appearance and analysis, and methodology of preparing food and/or related product. Elements and performance criteria Element 1 Collate food or related product specifications. Performance criteria 1.1 Specifications related to product are collated and available for publication within agreed timeframe. Range 1.2 specifications – colour, consistency, flavour, size, ingredient list and/or preparation methodology and/or formula and/or chemical analysis and/or microbiological parameters, physical and chemical characteristics. End user requirements for specifications are collated when preparing specification information for publication. Range end user – internal, external. 1.3 Specifications are accurate, legible and documented in agreed format. 1.4 Collation of product specifications complies with organisational policies, procedures, and legislation. Range policies and procedures – work instructions and/or manuals and/or operating procedures and/or quality standards. 1.5 Authorised changes to existing specifications are available for publication within agreed timeframe. 1.6 Legislative requirements for product specification publication are determined and documented. Performance criteria 2.1 Product specifications are published in a format that meets organisational policy within agreed timeframe. 2.2 Product specifications are clear, accurate, concise, and convey necessary information to reproduce product. Range customer – internal and/or external. 2.3 Content of published product specifications conforms to legislative requirements. 2.4 Product specifications are maintained and authorised changes are accurate, and implemented within a timeframe that meets customer requirements. 2.5 Publishing and maintaining of specifications complies with organisational policies, procedures, and legislation. Range 2.6 Communication with personnel affected by changes in product specifications is within a timeframe that optimises efficiency of performance and promotes goodwill. Range 2.7 policies and procedures – work instructions and/or manuals and/or operating procedures and/or quality standards. personnel – production and/or printers and/or material suppliers. Obsolete specifications are removed from circulation once updated specifications are available. Please note Providers must be accredited by NZQA, or an inter-institutional body with delegated authority for quality assurance, before they can report credits from assessment against unit standards or deliver courses of study leading to that assessment. Industry Training Organisations must be accredited by NZQA before they can register credits from assessment against unit standards. Accredited providers and Industry Training Organisations assessing against unit standards must engage with the moderation system that applies to those standards.
