Element 1
Demonstrate knowledge of the international markets and market implications of venison
production and marketing.
Performance criteria
1.1
International markets and product forms are described in terms of their structure
and functions.
1.2
Factors that influence international venison prices are described in terms of
global and local implications.
1.3
International market implications of venison are described with reference to
accepted farming practices in New Zealand.
1.4
International market implications of venison are described with reference to
conformance with welfare standards.
1.5
International market implications of venison marketing are described with
reference to the use of animal remedies in food producing animals, and public
health and safety issues relating to velveting drugs.
Element 2
Demonstrate knowledge of the product grading system in New Zealand for venison
carcass.
Performance criteria
2.1
Industry organisations are described in terms of their roles and powers.
Range
organisations include but are not limited to – the National
Velveting Standards Body, the New Zealand Deer Farmers’
Association, the New Zealand Veterinary Association, Deer
Industry New Zealand, the National Animal Welfare Advisory
Committee (NAWAC).
2.2
Product grades are identified in accordance with Deer Industry New Zealand
Guidelines.
2.3
The product grading system is described in terms of how it indicates marketable
quality of the product.

Element 3
Demonstrate knowledge of venison production.
Performance criteria
3.1
Management policies for venison production options are described in terms of
the classes of deer.
3.2
Livestock feeding and husbandry practices are described in terms of achieving
target velvet weights and efficiency for venison production.
3.3
Venison production records are assessed and the relevance of the information
to livestock management is described in terms of achieving target venison
weights and efficiency for venison production.
Please note
Providers must be accredited by NZQA, or an inter-institutional body with delegated
authority for quality assurance, before they can report credits from assessment against
unit standards or deliver courses of study leading to that assessment.
Industry Training Organisations must be accredited by NZQA before they can register
credits from assessment against unit standards.
Accredited providers and Industry Training Organisations assessing against unit standards
must engage with the moderation system that applies to those standards.
Accreditation requirements and an outline of the moderation system that applies to this
standard are outlined in the Accreditation and Moderation Action Plan (AMAP). The
AMAP also includes useful information about special requirements for organisations
wishing to develop education and training programmes, such as minimum qualifications for
