Definitions
Organisational requirements refer to instructions to staff on policy and procedures which
are documented in memo and/or manual format and are available in the workplace.
These requirements include but are not limited to – site specific requirements,
company quality management requirements, hygiene, health and safety, regulatory
and legislative requirements.
In-process monitoring in this unit standard refers to process control monitoring and may
include but is not limited to – product, dairy and non-dairy ingredients, process
environment, water.

Routine explanations and reports may: be in everyday workplace language including
mathematical language and some commonly used technical terms; be presented
orally; be presented in writing using standard format, proforma, charts and diagrams;
include mathematical and other information from several sources.

Assessment is to be made in the industry context, and should take place primarily
on-the-job under normal working conditions.

Mathematical operations may include routine estimation and calculation and involve
percentages, comparisons, and variations. Calculators may be used.

Descriptions of work practices must be in accord with codes of practice and
organisational requirements.

Legislative and regulatory requirements applicable to this unit standard are: Animal
Products Act 1999, Animal Products (Dairy) Regulations 2005, relevant Dairy
Specifications/Notices.
Outcomes and evidence requirements
Outcome 1
Explain sampling controls for in-process monitoring and final product sampling in the dairy
industry.
Evidence requirements
1.1
Sampling controls are explained in terms of means for prevention of sample and
product contamination and to ensure that the sample is representative.
controls may include but are not limited to – people, environment
sampling equipment, sample protection, sample retention.
Evidence is required for a minimum of four sampling controls for
an in-process or final product sampling procedure in the
individual’s workplace or site, in accordance with organisational
requirements.
Range
1.2
Restrictions on re-sampling and re-testing of final dairy produce are explained in
accordance with organisational requirements.
This unit standard is expiring. Assessment against the standard must take place by
the last date for assessment set out below.
