People credited with this unit standard are able to: carry out liquid bakers yeast preparation; carry out a stabilised liquid yeast mixing process; prepare for tanker loading; carry out a tanker check; carry out tanker pre-loading operations; operate and monitor the tanker loading process; and complete tanker loading, in a bakers yeast manufacturing operation. Organisational requirements – refer to instructions to staff on policy and procedures which are documented in memo or manual format and are available in the workplace. These requirements include but are not limited to – site specific requirements, company quality management requirements, legislative requirements. 3 This unit standard must be assessed in a realistic workplace environment. The candidate must be under realistic time pressures and use relevant commercial equipment. Outcomes and evidence requirements Outcome 1 Carry out liquid bakers yeast preparation. Primary Industry Training Organisation SSB Code 101558 New Zealand Qualifications Authority 2016 NZQA registered unit standard 28585 version 1 Page 2 of 5 Evidence requirements 1.1 Prepare the batch production process for manufacturing liquid bakers yeast in accordance with organisational requirements. 1.2 Raw materials are collated and prepared for the production process in accordance with organisational requirements. 1.3 Set-up and shut down the system in accordance with organisational requirements. 1.4 Systems, control points, product, processes and equipment are monitored and any non-compliance reported in accordance with organisational requirements. 1.5 System is cleaned and sanitised and any waste is collected, treated or disposed of in accordance with organisational requirements. Outcome 2 Carry out a stabilised liquid yeast mixing process. Evidence requirements 2.1 Ingredients are collated and weighed in accordance with the recipe. 2.2 Ingredients are mixed in accordance with the recipe and organisational requirements. 2.3 Mixed ingredients are pumped out for further processing in accordance with organisational requirements. 2.4 Tanks are cleaned and made ready for further operations in accordance with organisational requirements. Outcome 3 Prepare for tanker loading in a bakers yeast manufacturing operation. Evidence requirements 3.1 Clean-in-place processes are prepared for in accordance with organisational requirements. 3.2 Automated cleaning process is operated and monitored in accordance with organisational requirements. 3.3 Waste is disposed of and plant returned to operating condition in accordance with organisational requirements. Outcome 5 Carry out tanker pre-loading operations in a bakers yeast manufacturing operation. Evidence requirements 5.1 Liquid bakers yeast lines are checked in accordance with organisational requirements. 5.2 Product requirements are checked in accordance with organisational requirements. 5.3 Volume is set in accordance with customer and organisational requirements. Outcome 6 Operate and monitor the tanker loading process in a bakers yeast manufacturing operation. Evidence requirements 6.1 Tanker loading process is started and operated in accordance with organisational requirements. 6.2 Equipment is monitored to confirm load transfer to correct location in correct quantities in accordance with customer and organisational requirements. 6.3 Minimal water is purged in accordance with organisational requirements. 6.4 Variation in equipment operation is identified and maintenance requirements reported in accordance with organisational requirements. 6.5 Workplace housekeeping standards are met in accordance with organisational requirements. Evidence requirements 7.1 Security tags are applied to tanker outlets in accordance with organisational requirements. 7.2 Equipment settings are selected to complete loading in accordance with organisational requirements. 7.3 Product is purged from lines, if required, in accordance with organisational requirements. 7.4 Equipment and loading bay are cleaned and prepared for further loading and unloading in accordance with organisational requirements. 7.5 Information on the loading operation is recorded in accordance with customer and organisational requirements. 7.6 Maintenance requirements are identified and reported in accordance with organisational requirements. 7.7 Safe work practices are observed in accordance with organisational requirements.
