This entry level unit standard is for people whose job requires
them to apply cleaning procedures that meet the hygiene
requirements for work areas in the meat processing industry.
People credited with this unit standard are able to: clean work
areas in the meat processing industry; demonstrate team-work;
and comply with organisational and statutory hygiene and
safety requirements.

Definitions
Organisational requirements – instructions to staff on policies and procedures which
are documented in memo, electronic or manual format and are available in the
workplace.
Operator – the candidate being assessed against this unit standard.

Outcome 1

Evidence requirements
1.1
Hygiene faults identified by inspections are rectified in accordance with
organisational requirements.
1.2
Floors, walls, ceilings and equipment are cleaned in accordance with
organisational requirements.

1.3
Condensation and pooling of water is avoided or rectified in accordance with
organisational requirements.
1.4
Moisture sensitive equipment is cleaned and protected in accordance with
organisational and manufacturer’s requirements.
1.5
Clean-up is completed within the time allocated in accordance with
organisational requirements.
1.6
The use of hot and cold hoses complies with organisational requirements.
1.7
Safety procedures are followed in handling hoses, chemicals, machinery and
equipment to protect operator and other people in accordance with
organisational requirements.
1.8
Gross contamination is collected and removed in accordance with
organisational requirements.
1.9
Objects likely to obstruct drains are collected and disposed of in accordance
with organisational requirements.
1.10
Chemical types, dilutions and use meet organisational requirements and
manufacturer’s specifications for the surface and contaminant involved.
1.11
All cleaning equipment and supplies are returned to their correct locations, and
chemicals are stored in accordance with organisational requirements.
1.12
Machinery, water, lights and power are turned off in accordance with
organisational requirements.

2.1

product flow and organisational requirements.

The quality and completeness of tasks meet the operational requirements of
following co-workers.

maintain and improve task and product quality.
2.4
Co-workers are not endangered through the operator’s methods and
equipment.
2.5
Co-worker assistance is provided within the confines of product flow and
operator space.

2.6
Machinery, equipment, and facility malfunctions are identified and reported to
supervisory staff in accordance with organisational requirements.
2.7
Conflict resolution techniques are applied to minimise interpersonal differences
with co-workers which may adversely affect team performance.

Comply with organisational and statutory hygiene and safety requirements.
Evidence requirements
3.1
Company supplied clothing, and hygiene and safety equipment are worn and
used in accordance with organisational and statutory requirements.
3.2
Work methods comply with specified organisational and statutory requirements
to minimise the risk of product contamination and injuries to the operator and
others.
3.3
Contaminated meat products, surfaces, machinery and equipment are handled
in accordance with organisational and statutory requirements.
3.4
Unsafe and unhygienic conditions are identified and reported to supervisory
staff in accordance with organisational requirements.
3.5
Equipment, operator and work area cleanliness complies with organisational
and statutory requirements.

before they can report credits from assessment against unit standards or deliver courses
of study leading to that assessment.

NZQA before they can register credits from assessment against unit standards.
