This unit standard is for people working in a cheese factory or
the cheese manufacturing department of a dairy manufacturing
plant.
People credited with unit standard are able to: prepare an
automated cheese cutting and shredding process for operation;
operate and monitor an automated cheese cutting and
shredding process; and shut down an automated cheese
cutting and shredding process.

Legislation
Legislation relevant to this unit standard includes but is not limited to the Animal
Products Act 1999, Health and Safety in Employment Act 1992, and Animal Products
(Dairy) Regulations 2005.

Definitions
Organisational requirements – instructions to staff on policies and procedures which
are documented in memo, electronic or manual format and are available in the
workplace.
Automated cheese cutting and shredding process – an integrated and automated
cheese cutting and shredding line comprised of block cutter in-feed conveyor system,
automated block cutter, shredder machine metering conveyor(s), lane feed shaker(s),
two-dimensional and three-dimensional cheese shredding and dicing machines, and
out-feed conveyor systems linked via an automated line control system to provide
automated flow control of shredded or diced cheese to multi-head scales for
packaging.
Materials – single cheese and multiple cheese blends such as Mozzarella, Cheddar,
Colby, Parmesan, and Shreddar (low fat).
Processes – batch or continuous and apply to single or multiple product
specifications or types.

This unit standard must be assessed in a realistic workplace environment. The
candidate must be under realistic time pressures and use relevant commercial
equipment.

Outcome 1
Prepare an automated cheese cutting and shredding process for operation.
Evidence requirements
1.1
Materials meet operating requirements.
1.2
Cleaning and maintenance requirements and status are identified and
confirmed in accordance with organisational requirements.
1.3
Cutting and shredding process components and related attachments are fitted
and adjusted in accordance with organisational requirements.
1.4
Processing and/or operating parameters are entered as required in accordance
with safety and organisational requirements.
1.5
Equipment performance is checked and adjusted in accordance with
organisational requirements.
1.6
Pre-start checks are carried out in accordance with organisational requirements.
Outcome 2
Operate and monitor an automated cheese cutting and shredding process.
Evidence requirements
2.1
The cheese cutting and shredding process is started and operated in
accordance with organisational requirements.
2.2
Equipment is monitored to identify variation in operating conditions in
accordance with organisational requirements.
2.3
Variation in equipment operation is identified and maintenance requirements
are reported in accordance with organisational requirements.
2.4
The process is monitored to confirm that shred and/or dice size and fines levels
meet specifications in accordance with organisational requirements.
2.5
Out-of-specification product and/or process outcomes are identified, rectified
and/or reported to maintain the process within specification in accordance with
organisational requirements.
2.6
Workplace records are maintained in accordance with organisational
requirements.
Outcome 3
Shut down an automated cheese cutting and shredding process.

Evidence requirements
3.1
The shut down procedure is identified in accordance with organisational
requirements.
3.2
The cheese cutting and shredding process is shut down in accordance with
organisational requirements.
3.3
Maintenance requirements are identified and reported in accordance with
organisational requirements.
