This unit standard is for experienced people who are employed in the rendering department in a meat processing operation.

People credited with this unit standard are able to demonstrate knowledge of: the production of meat and bone meal from cooked material during rendering operations; and the processing and storage conditions that affect meat and bone meal quality during rendering operations.

Company specifications

– product specifications set by the company relating to yields, presentation, and product quality.

Cooked material – any animal tissue intended as a by-product that has been cooked using batch or continuous cookers to produce edible or inedible rendered products.

Customer specifications – product specifications set by clients relating to product quality, presentation and packaging.

Organisational requirements

– instructions to staff on policies and procedures that are documented in memo, electronic, or manual format and available in the workplace.

Outcomes and evidence requirements

Outcome 1

Demonstrate knowledge of the production of meat and bone meal from cooked material during rendering operations.

Evidence requirements

1.1 The process of extracting meat and bone meal from cooked material is described in terms of methods of monitoring the separation of fat from protein solids and the operation of pressing equipment.

1.2 The process of screening and grinding protein solids is described in terms of producing meat and bone meal.

1.3 Meat and bone meal quality is described in terms of sampling and testing requirements.

1.4 Production requirements for meat and bone meal are outlined in terms of company and customer specifications.

2.2

Range production requirements may include but are not limited to – ease of handling, composition, particle size.

Outcome 2

Demonstrate knowledge of the processing and storage conditions that affect meat and bone meal quality during rendering operations.

Evidence requirements

2.1 Factors affecting meat and bone meal colour are described in terms of processing conditions.

Range factors include but are not limited to – raw material composition, cooking temperature.

The quality of meat and bone meal is described in terms of nutritional factors.

Range nutritional factors include but are not limited to – amino acids, browning reactions, cross-linking.

2.3 Factors that affect meat and bone meal quality during storage are described in terms of potential food hazards.

Range factors include but are not limited to – moisture content, growth of bacteria
