Purpose
People credited with this unit standard are able to: explain the
application of poultry pre-slaughter and post-mortem
examination monitoring, corrective action, and verification;
explain the application of, and apply, statistical process control
tools for pre-slaughter and post-mortem examination, and final
product inspection, of poultry; and describe effective auditing
processes, techniques, and standards required for preslaughter and post-mortem examination of poultry.

Definitions
RMP refers to risk management programme.
WFHS refers to whole flock health scheme – a documented system of health
surveillance (including, where applicable, disease control or eradication) and the

management of agricultural compounds and veterinary medicines according to any
general or specific conditions of use.
Dispositions refers to the action of ensuring that examined animal material or animal
product that has abnormalities is managed in accordance with legislative
requirements.

Explain the application of monitoring, corrective action, and verification for pre-slaughter
and post-mortem examination of poultry.

The purpose of monitoring is explained as it applies to poultry production and
processing.

The distinction between process limits and final product parameters is
explained.

The three activities involved in corrective action are explained.
