Quick, Easy, and Healthy Banana Recipes
Check out these healthy recipes that help incorporate more bananas into your diet!
They are simple and can all be made in 10 minutes or less-most are even dorm-room
friendly!
Breakfast
Banana Pancakes
1 ripe banana
1 egg
Dash of cinnamon
 Mash ripe banana in a bowl, then add the egg and the cinnamon
 Mix all ingredients until you have an even consistency
 Use this mixture as your pancake batter! It will seem very runny, and the
pancakes will be thin, but very delicious!
 Make pancakes on stove top and serve with your favorite toppings (peanut
butter, chocolate chips, berries, sliced almonds/walnuts, maple syrup, etc.)
Cinnamon Raisin Oatmeal Muffins
2 ripe bananas
1/3 cup peanut butter
1 tbsp. cinnamon
2 cups oatmeal
1/3 cup raisins
 Preheat oven to 350 degrees and place 8 muffin liners in muffin pan.
 In a large bowl, mash bananas with peanut butter. Stir in cinnamon and
oatmeal and then gently mix in raisins.
 Bake for 20-25 minutes, until tops are slightly browned. Enjoy!
Peanut Butter Banana Smoothie
1 banana
2 tbsp. natural creamy peanut butter
1 cup milk of choice (skim, almond, etc.)
1 c. ice cubes
 Slice the banana and place in a blender along with the peanut butter, milk,
and ice cubes
 Puree until smooth and enjoy!
Lunch/Dinner
Peanut Butter Banana Roll Ups
1 whole wheat tortilla
2 tbsp. peanut butter
1 banana
½ tbsp. honey
 Spread peanut butter on tortilla
 Slice banana and place evenly all over tortilla
 Drizzle with honey, roll up, and enjoy!
The Elvis
2 tablespoons peanut butter
2 slices whole grain bread
1 banana, peeled and sliced
3 slices cooked turkey bacon
1 tsp. butter
 Spread the peanut butter on one side of one slice of bread. Top with sliced
banana, then slices of cooked bacon. Cover with the other slice of bread.
 Spread butter on the outside of the sandwich.
 Heat a skillet over medium heat. Fry the sandwich on each side until golden
brown and peanut butter is melted (around 4 min) and enjoy!
Dessert
Dark Chocolate Peanut Butter Banana Bites
1-2 bananas
2 tbsp. peanut butter
½ cup dark chocolate chips
 Slice bananas into around ¼ inch pieces
 Spread a thin layer of peanut butter on one side of banana slice, then place
another slice on top to create a ‘sandwich.’
 Once you have created all your bites, freeze them for 30 min
 Melt the dark chocolate and dip the frozen banana bites
 Freeze until the chocolate hardens and enjoy!
Flourless Brownies
3 medium, overripe bananas
½ cup smooth nut butter (peanut or almond)
2 tbsp.- ¼ cup coco powder (the more added, the richer the brownie)
 Preheat oven to 350 degrees and grease a small cake/loaf pan
 In a microwave-safe bowl, melt nut butter of choice

In a large bowl, combine mashed bananas, melted nut butter and coco
powder and mix into an even consistency
 Pour the mixture into the greased pan and bake for around 20 minutes or
until cooked through and enjoy!
