The Phat Controller, Phat Pasty Co.
Graduated with a 1st Class Honours degree in Hotel Management Paul has spent the last
25 years working in the food service industry.
Initially as a graduate trainee with Bass, working in the UK and seconded to the US for a
year to identify key trends and new concept opportunities to franchise or develop into the
UK marketplace.
Joined Pizza Hut in the early days of the UK development, managing the flagship business
in the West End. Moved to Poland as Operations Director to oversee the launch of Pepsico
restaurant brands (Pizza Hut, Kfc & Taco Bell), into Poland and Eastern Europe. This
involved managing and developing franchise partners throughout the region.
In 2006 with his wife, Laura, they developed the Phat Pasty Co as a franchisable business
model. The business started life as a 'delivered to work' mobile food offer, using
campervan style vans and traditional handmade Cornish pasties. This business has been
franchised, however, the Phat Pasty Co have now moved into developing retail branded
products to sell to other food service operators and continue to develop and create
concept solutions using the Phat products and branded equipment.
