2005 Fresh Market Vegetable Production Down 2 Percent from 2004
Fresh market vegetable and melon production for the 24 selected crops estimated in 2005 totaled 473 million hundredweight,
down 2 percent from last year’s comparable States. Harvested area covered 1.94 million acres, down less than 1 percent from
comparable States in 2004. Value of the 2005 crop is estimated at 9.82 billion dollars, up 1 percent from comparable States a
year ago. The three largest crops, in terms of production, are onions, head lettuce, and tomatoes, which combined to account for
37 percent of the total production. Tomatoes, head lettuce, and onions claim the highest values, accounting for 36 percent of the
total value when combined.
For the 24 selected vegetables and melons estimated in 2005, California continues to be the leading fresh market State, accounting
for 44 percent of the harvested area, 48 percent of production, and 47 percent of the value.

2005 Processing Production of 8 Selected Vegetables Down 11 Percent from 2004
Processing production of 8 selected vegetables estimated in 2005 totaled 15.7 million tons, down 11 percent from last year’s
comparable States. Area harvested is estimated at 1.29 million acres, down 1 percent from comparable States a year ago.
Processing crop value is estimated at 1.27 billion dollars, 9 percent below comparable States in 2004. The three largest crops, in
terms of production, are tomatoes, sweet corn, and snap beans, which combine to account for 90 percent of the 8 processing crops
estimated in 2005. The three most valuable of the 8 processed vegetables estimated in 2005 are tomatoes, sweet corn, and
cucumbers for pickles, accounting for 78 percent of the total value when combined.
For the 8 processed vegetables estimated in 2005, California leads the nation with 22 percent of the harvested acreage, 63 percent
of the production, and 48 percent of the value.

Definition of Terms
Hundredweight (cwt.) is the unit used for fresh market yield and production and is equal to one hundred pounds.
Prices are a marketing year average for all methods of sale. For a crop sold for both fresh market and processing, the Marketing
Year Average Price (MYA) is a weighted average of the fresh and processing price.
Prices for fresh vegetables are the average prices producers receive at the point of first sale. This is commonly referred to as the
average price as sold. Since the point of first sale is not the same for all producers, prices for the various methods of sale are
weighted by the proportionate quantity sold. For example, if in a given State part of the vegetables are sold F.O.B. packed by
growers, part are sold as bulk vegetables at the packinghouse door, and some are sold retail at roadside stands, the fresh vegetable
average price as sold is a weighted average of the average price for each method of sale.
F.O.B. packed prices are adjusted to an equivalent incoming packinghouse door price by subtracting all costs that accumulate
between the incoming packinghouse door and the F.O.B. price. These costs include grading, packing, inspecting fees, selling, and
other costs.
Prices for vegetables sold for processing are equivalent returns for vegetables delivered to the processing plant door.
Crop value estimates in this report cover the marketing season or crop year and should not be confused with cash receipts from
these crops which are on a calendar year.

WEIGHTS and MEASURES
The following table on weights, measures, and conversion factors covers the vegetables in this report. It does not cover all
containers for any one product.
The information has been assembled from State schedules of legal weights, various sources within the U.S. Department of
Agriculture, and other Government agencies. For many vegetables, there is a considerable variation in weight per unit of volume
due to differences in variety or size of commodity, condition and tightness of pack, degree to which the container is heaped, etc.
Effort has been made to select the most representative and fairest average for each product. For those commodities which develop
considerable shrinkage, the point of origin weight or weight at harvest has been used.
The approximate or average weights as given in this table do not necessarily have official standing as a basis for packing or as
grounds for settling disputes. Not all of them are recognized as legal weight. The table was prepared chiefly for use of workers in
the U.S. Department of Agriculture who have need of conversion factors in statistical computations.

Prospering in Rural America
The theme is “Prospering in Rural America,” and the program
will highlight the economic development of rural America. In
addition, there will be a broad range of sessions, including
Shifting Trade Patterns, Chinese Agriculture, Homeland
Security, the African Growth & Opportunity Act, Bio-fuel
Production and New Energy Forms in Rural Areas, Community
Supported Agriculture, and Feedback from the 2007 Farm Bill
Listening Sessions.
Agriculture Secretary Mike Johanns and other top experts in
agriculture will be among the more than 130 speakers.
