PLANO INDEPENDENT SCHOOL DISTRICT Job Description JOB TITLE: Cafeteria Manager Culinary WAGE/HOUR STATUS: Non-Exempt REPORTS TO: Supervisor FANS Culinary PAY GRADE: 440 SCHOOL/ DEPT: Assigned Campuses/ Food & Nutritional Services (FANS) DATE REVISED: 08/06/15 PRIMARY PURPOSE: Work with campus sites to implement menu concepts, test food products and enhance recipes to increase student acceptance of the national school breakfast and lunch programs. Meet requirements set forth by the FANS Central Office and have working knowledge of Child Nutrition Programs, as well as, local, state and federal regulations. QUALIFICATIONS: Education/Certification: High school diploma or equivalent Completion of a credited sanitation course and maintain certification Completion of manager training program Texas Association of School Nutrition (TASN) level III certified Ten hours of continuing education annually Driving record that is insurable by Plano ISD’s insurance carrier Special Knowledge/Skills: a) Kitchen equipment b) Office equipment c) Computer applications Ability to communicate effectively both orally and written Ability to handle money efficiently and perform routine mathematical calculations Deal with all people in a courteous manner Effective planning and organizational skills Must be customer service focused Knowledge of basic principles of quality cooking Flexibility to work at various campus sites Page 1 JOB TITLE: Cafeteria Manager Culinary JD - 440 Experience: One year of public school food service experience or three years of food service operation management MAJOR RESPONSIBILITIES AND DUTIES: Menu and Recipe Concepts Test and revise standardized recipes for breakfast and lunch based on current trends. Assist in collection of data on product acceptability, menu participation and food cost while ensuring menu items receive positive feedback from our customers. Initiate new ideas for menu items, recipes and marketing trends. Cook food samples for taste testing. Gather data to analyze the acceptability of the products. Adhere to the usage of all USDA food items by developing recipes to utilize products on the menu that are appealing to the students. Marketing Assist schools with line presentation of food and décor. Work closely with schools in setting up health fairs, classroom nutrition education classes as well as any other campus activities pertaining to student parent involvement, nutrition advisory committees and campus wellness committees. Support FANS efforts to produce the highest quality products consistently across all locations. Training Provide on the job culinary training for managers and employees. Observe employees engaged in preparing and portioning food items to ensure methods of cooking and size of portion are in line with the most current standardized recipe. Provide timely feedback to employees and respective supervisor when observing behaviors not consistent with standard operation procedures. Sanitation, Safety, and Security Maintain food production that ensures the safety and quality of food per departmental guidelines and Plano Health Department requirements. Ensure that food items are stored in a safe and hazard free environment. Maintain a sanitary environment following food service and Plano Health Department codes and regulations. Maintain a safe and hazard-free working environment. Professional Growth and Development Assume responsibility for kitchen operation in absence of manager. Follow all rules, regulations, and policies of Plano ISD and follow directives from supervisors. Follow attendance policy as assigned by department. Perform other functions that may be assigned by the administration and/or supervisor. Page 2 JOB TITLE: Cafeteria Manager Culinary JD - 440 SUPERVISORY RESPONSIBILITIES: Supervise, evaluate, and train employees at campus site. EQUIPMENT USED: Large and small kitchen equipment to include, but not limited to, electric slicer, institutional mixer, pressure steamer, sharp cutting tools, ovens, dishwashers, food utility carts, and computer. WORKING CONDITIONS: Mental Demands: Work with frequent interruptions. Maintain emotional control under stress; able to learn and apply new methods in all areas; initiator; makes suggestions for improvements. Physical Demands: Frequent standing, stooping, bending, kneeling, pushing and pulling. Prolonged use of computer and repetitive hand motions. Occasional lifting up to 50 pounds. Environment: Moderate exposure to extreme hot and/or cold temperatures; excessive humidity, dampness or chilling; excessive noise, intermittent; fumes, smoke, or gases; solvents (degreasing agents); grease and oils; work around machinery with moving parts; work around moving objects; work with hands in water.
