PRIMARY PURPOSE:
Responsible for supervising food service managers in technical and procedural work methods. Responsible for ensuring that
school facilities are in compliance with all local, state, and federal policies and procedures.
QUALIFICATIONS:
Education/Certification
Bachelor of Science Food and Nutrition or Restaurant, Hotel, and Institutional Management or equivalent years of
experience in a food service establishment
Completion of credited sanitation course and maintain certification
Texas Association of School Nutrition (TASN) Level V Certifiable
Registered/Licensed Dietitian or School Nutrition Specialist (SNS) preferred
Driving record that is insurable by Plano ISD’s insurance carrier
30 hours of professional development annually
Special Knowledge/Skills:
Knowledge of all United States Department of Agriculture (USDA) guidelines and procedures
Knowledge of food production and management concepts, ability to ensure quality control measures are in place
Knowledge of basic principles of quality cooking
Proficiency in Microsoft Office with intermediate to advanced skills in Word, Outlook, and PowerPoint and
intermediate skills in Excel
Knowledge of food service software applications
Competence in adult education techniques, classroom education techniques, materials development, and evaluation
Effective planning and organizational skills
Ability to communicate well, both verbally and written
Ability to get along and work with people
Deal with all people in a courteous manner
Ability to supervise FANS campus personnel
Ability to keep information confidential

Must be familiar with and able to operate kitchen equipment and teach others to operate and care for equipment
Experience
Three years of management experience in a food service and or related establishment
MAJOR RESPONSIBILITIES AND DUTIES:
Operational Support
Schedule campus visitations for monitoring purposes a minimum of 80% of the work week.
Supervise and evaluate food service managers at designated campuses serving as a liaison between the FANS
administrative staff, campus principal, and food service staff.
Provide assistance to managers in the following areas: organizational skills, technical knowledge, and required
paperwork including production records and work schedules.
Support FANS efforts to produce the highest quality products consistently across all campus sites.
Recommend replacement of existing large and small equipment to meet department needs.
Coordinate and participates in the planning of renovation and building of new campus sites.
Assist with special events such as catering/concessions and/or projects as assigned by FANS director and/or
designee.
Instructional Management
Educate FANS managers on the rules, regulations, policies, procedures, and standards set by the department.
Train managers and staff in identified areas of improvement.
Document training and follow-up.
Responsible for coordinating staff development and in-service training programs.
Compliance Monitoring
Perform on site visitation reviews to evaluate operational practices for production management, quality control,
sanitation, safety, personnel management and parent/student involvement.
Monitor the federal breakfast and lunch program to ensure regulations are maintained.
Financial Management and Record Keeping
Review, monitor, and evaluate monthly statement of revenue and expenditures.
Monitor customer participation and evaluated staffing needs in accordance with reports from assigned campus
sites and make recommendations based on findings.
Monitor, maintain, and submit accurate information for payroll reporting.

Personnel Management
Implement procedures to ensure fair and equitable treatment of FANS employees with responsibility for
resolving staff and operational concerns as related to overall campus operations.
Supervise assigned employees and assist in performing various human resources functions, including progressive
discipline, performance appraisal, and staff development.
Provide an environment where employee’s feedback is encouraged and creative ideas are credited appropriately
and incorporated into daily schedules to ensure operation runs efficiently.
Sanitation, Safety, and Security
Ensure that all food items are served per menu specifications in a safe and appropriate manner according to
Health Department and FANS guidelines.
Establish and enforce standards of cleanliness, food safety, and hazard analysis critical control point (HACCP)
regulations.
Professional Growth and Development
Demonstrate behavior that is professional, ethical, and responsible. Works in harmony with FANS central
office, campus staff, and food service personnel.
Attend and participate in all meetings as scheduled by the food service director or designee.
Participate in departmental administrative functions including budgeting, purchasing, and planning as related to the
development and updates of operational and strategic plans.
Attend workshops, district staff development sessions, and other continuing education courses to improve
supervisor’s basic knowledge of food service operations.
Follow all rules, regulations, and policies of Plano ISD and follow directives from administrative staff.
Perform other functions that may be assigned by the administration and/or supervisor.
SUPERVISORY RESPONSIBILITIES:
Supervise and evaluate the performance of FANS campus managers; responsible for training others in multiple/complex
tasks.
EQUIPMENT USED:
Computers, printers, copiers, calculators, computer hardware and software systems, fax, scanner, and audiovisual
equipment. Knowledge of operational techniques for large and small equipment.
WORKING CONDITIONS:
Mental Demands:
Maintain emotional control under stress; mentally alert; able to learn and apply new methods in all areas; initiator; makes
suggestions for improvements.
Physical Demands:
Frequent district wide and/or state wide travel; occasional prolonged and irregular hours. Frequent standing, sitting,
walking, pushing, pulling, stooping, bending, and kneeling. Occasional lifting up to 50 pounds. Prolonged use of
computer and repetitive hand motions.

Environmental Factors:
Moderate exposure to extreme hot and/or cold temperatures; excessive humidity, dampness or chilling; excessive noise,
intermittent; fumes, smoke, or gases; solvents (degreasing agents); grease and oils; work around machinery with moving
parts; work around moving objects; work with hands in water.
