During the holiday season Glazed Pork and Sweet Potatoes Makes 2 Servings 5 oz (about 1 cup) cooked plain diced pork, with fat and bones removed 1 small onion, sliced into strips 1 cup unsweetened apple juice, divided 1 tablespoon all purpose flour 1/4 teaspoon ground allspice, to taste 1/4 teaspoon ground black pepper 1 cup peeled and cooked sweet potatoes 1. Wash your hands and work area. 2. Combine cooked pork, onion strips and 1/2 cup apple juice in a skillet sprayed with non-stick cooking spray. 3. Cover and cook over medium heat until onions are tender, stirring occasionally. 4. In a jar with a tight fitting lid, combine remaining 1/2 cup apple juice, flour, allspice, and pepper. Shake well. 5. Stir flour mixture into meat mixture until well-blended. 6. Add cooked, peeled sweet potato pieces. 7. Cover and cook over low heat about 10 minutes longer, spooning sauce over meat and vegetables occasionally. 8. Serve hot. 9. Cover and refrigerate leftovers within 2 hours.
