Meal Service 2015 SFSP Training 1 Breakfast Three food components are required for a reimbursable breakfast: • • • Fruit/Vegetable 1/2 Cup Grains/Breads 1 Serving Milk 1 Cup – Optional: 2 Meat and Meat Alternates Lunch or Supper • • • • 3 Meat or Meat Alternate Fruit/Vegetable (2 items) Grains/Breads Milk 2 oz. ¾ cup 1 serving 1 cup Meat/Meat Alternate • • • • • • • Dry Beans/Peas Peanut Butter Yogurt Nuts and seeds Meat Cheese Egg ½ cup 4 T = 2oz mt 1 cup =2oz mt 1 oz* 2 oz. 2 oz. 1 * Nuts and seeds may meet only one-half of the total meat/meat alternate serving 4 and must be combined with another meat/meat alternate to fulfill the lunch or supper requirement. Fruits and Vegetables • Juice-must be 100% (read the label) • Juice may only count as half of the fruit/vegetable requirement ( half of ¾ is 3/8 cup). Serve children with special dietary needs (with appropriate documentation) Ensure that children eat all meals on site (except if Sponsor has chosen to allow Grain and/or Fruit and Vegetable to be taken off-site) Serve meals during approved times. MEAL SERVICE REQUIREMENTS CONTINUED… 27 Serve each child a first meal before seconds are served There is no limit on the amount of time that must elapse from the beginning of one meal to the beginning of the next No limits on the duration of meal service MORE… MEAL SERVICE REQUIREMENTS 28 Arrange for proper storage of excess meals. Make arrangements for inclement weather, if meals are served at an outdoor site. FOOD TEMPERATURES Ensure that meals are kept at proper temperatures: “HOT” FOODS “HOT” “COLD” FOODS “COLD” 29 OFFER VERSUS SERVE (OVS) Available as an Option for all sponsors An option, not a requirement May operate at all or some sites Family Style: no OVS Sponsors must train staff *For more information on OVS, contact Amy Berner for training information 30 SECOND MEALS 31 A second meal may be served if all the children have been served a first meal Must be complete second meal, not second portion Second meals may not be claimed if FAMILYSTYLE meal service is provided SHARE TABLE Sponsors may designate a “share table” Children may return whole items that they chose not to eat to the share table. Nonperishable components that remain on a share table may be appropriately stored for later service. *Provided this is in compliance with local and State and health safety codes. 32 CN LABEL(Child Nutrition) Must be available for commercially prepared foods.
