Two person Live Below the Line Challenge
Pair up and make the most of your shopping list and meals
DAY ONE
DAY TWO
Breakfast – Strawberry Banana Pancakes
Breakfast – Banana porridge
200g of flour, 1 egg, 180ml of milk (batter), 100g of
jam (50g per person), 1 bananas sliced, divide in half
250g rolled oats (divided in half), 3 cups cold water, 1
banana each sliced
Lunch – Potato and Leek Soup
Lunch – Egg Vegetable Fried Rice
Oil, 3 leeks, 3 potatoes cubed, 2 stock cubes, 21 slice
of toast each (save half of soup for reheat)
Oil, 300g of rice, 200g peas, 2 eggs, 2 stock cubes
Dinner – Mushroom and Pea Risotto
200g of mushrooms, 2 garlic cloves, 200g plain rice, 2
stock cubes, 150g of peas, thawed
Dinner – Egg and Sausage Sandwich with Beans
2 eggs (1 each) 2 sausage slices each, 4 slices of bread
(2 each), 333g of baked beans (divided in half)
Dessert – Biscuits (4 per person)
Dessert – Biscuits (3 per person)
DAY THREE
Breakfast – Banana Porridge
250g rolled oats (divided in half), 3 cups cold water, 1 banana each sliced
Lunch – Potato and Leek Soup
Reheat from Day 2, enjoy with a slice of toast each
Dinner – 2 eggs on Toast with Beans
2 eggs (1 each), 2 slices of bread (1 each), 200g of baked beans (divided in half)
Dessert – Biscuits (4 each)
DAY FOUR
DAY FIVE
Breakfast – 2 eggs with Beans
Breakfast – Toast with Jam
2 eggs (2 each), 300kg of beans, divided in half,
2 slices of bread for toast
2 slices of bread each, strawberry jam
Lunch – Mushroom and Veggie Risotto
200g of mushrooms, 2 garlic cloves, 200g plain
rice, 2 stock cubes, 300g of frozen peas,
thawed
