raw goat cheese. Montre chez (Mountain cheese) is a spreadable cheese with herbs. $6
for 8 ounces. Sliceable cheese with garlic. $20 for one round weighing over 2 pounds
that is made with 2 ½ gallons of milk or $5 per quarter round. Unsalted?

We did some research and found that all cheeses that are from out of the country by law
must be pasteurized. So even if it says “RAW” on the package IT IS NOT.
Alta Dena raw goat cheddar cheese is salted.

**Aajonus likes Lily's Eggs (can get them at Peoples food coop in OB.)
Fertile eggs from Santa Barbara Ranch but I don’t ‘think their feed is organic. Sold at
Mom’s in Newport Beach.
**Quail eggs are sold at Asian grocery stores, but feed is not organic. Hybridized quail
are easy to raise in an apartment. Quail produce more eggs than chickens. They will
produce year round if given artificial light to keep the day length long.
Annie from Ramona sells free range fertile eggs at the Pacific Beach Farmers Market on
Saturday morning and at the Del Mar Market in the PM on Saturdays.

to stores in Northern California. ** (AV does not recommend Rosies chicken because of
the large quantity of soy used in their feed.)

Dexter cow milk is 4% butterfat over 305 day lactation when fed for production. Dexter
is a small cow from Ireland that is becoming popular with homesteaders as its good for
milk and meat. The milk has smaller fat globules. The cream easily separates and makes

tuna, red snapper. (octopus is generally NOT raw) also the calamari, mussels, crab,

**any of the Sushi Restaurants have raw fish (sashimi) and sometimes oysters on the
half shell (hold the soy sauce).
**Yakatori II on sports arena often has oysters on the half shell. And you can ask them
to bring whole uncooked Quail Eggs. (many Japanese Restaurants will do this)
(Cynthia just brings along some Lubrication formula or butter/honey and some home
made pickled ginger to eat with the fish in a little jar in my purse.)

Av has said that he calls ahead and asks for the chef and requests Steak Tartar or
Capriccio. He says that he usually gets a positive response from asking the chef
personally ahead of time because they can tend to be bored of the regular menu and the
variation is refreshing for them.
