Student Provided
Uniform Requirements:
Must be in full uniform for each station each day in order to
earn daily participation points in class.
Kitchen: Chef coat, chef pants, kitchen apron, hat and closed-toe safe shoes.
Dining Room: Black Polo-style shirt, black pants, black shoes and dining room apron.
Academic Curriculum
Students joining the Culinary Arts program for a second year will have a separate
academic curriculum. Students will be issued the Culinary Essentials Textbook as well as
an access code for on-line tools and applications that will aid them in completing
assignments throughout the year.
Second year students must complete all assigned homework from the 29 chapters in
Culinary Essentials to earn full academic credit.
By completing the assigned work from Culinary Essentials, students will be
simultaneously developing the skills and knowledge necessary for earning National
Certification through the American Culinary Federation or other Culinary related
Pathways.
Second year students will be responsible for maintaining and updating
Notebooks / Portfolios from previous year and presenting them for review following the
dates from the calendar of curriculum.
Second year students will also be responsible for completing all on-line assignments.
Practical Curriculum
Second year students will be expected to apply for leadership positions in one of the five
rotation areas prior to opening the Class Act Restaurant on Monday, September 15th.
All students who are chosen for leadership positions will take part in leadership training.
ACF Certification
The Culinary Arts Program at Puget Sound Skills Center is held to the highest standard
by offering second year students national certification through the American Culinary
Federation. This is one of the pathways offered to 2nd year students.
Certified Secondary Graduate – Written Test - $19.00
Certified Junior Culinarian – Written & Practical Test – $35.00
Commercial Baking Certification – Written & Practical Test – $35.00
Culinary Essentials
Assignments & Due Dates
The chapter work below is intended to be homework. Some designated Mondays will be
allotted for cooperative study sessions. Chapter work may be hand written or typed.
Each Chapter is due at the end of each week due dates are listed for each chapter below.
Students are to read chapters and complete assignments following the schedule below.
Late work or failure to complete work will result in earning reduced credit.
Students and Parents are encouraged to use this syllabus as well as the 2nd Year Calendar
of instruction to keep track of all due dates and program happenings.
