An international restaurant with French overtones but using regional ingredients, Bistro
M created the first open kitchen in South America. Large windows’ facing out onto Plaza
Independencia and a patio to dine upon in the summer months ensures the Park Hyatt’s
Bistro M is the best located restaurant in Mendoza. Busy chefs attend to the wood-burning
oven while crisp waiters attend to you. The food is both traditional and adventurous such
as empanadas cooked in a wood-fuelled oven or choclo (corn) stuffed ravioli. The red
meat is Black Angus and seafood dishes include
mussels with avocado and grilled Pollack. A spiral staircase climbs past a two-floor wine
gallery housing over 2,500 selected regional wines, some of which are available by the
glass. Clearly the M in Bistro M stands for Magnificent!

AZAFRAN
International Cuisine
Named after Saffron, a spice more valuable than gold, Azafrán demands from itself
only the highest quality food and drink. The food is gourmet cuisine with great variety.
This charming eatery is set behind an attractively decorated all-wood wine store.
The food is imaginative, fresh, and eclectic. You may start with warm spinach and
asparagus salad or a platter of smoked meats and cheeses. The rabbit ravioli in
champagne sauce is delicate and unusual, and the vegetables and tofu baked in a puff
pastry will please any vegetarian. The service is convivial, and the wood tables and
vintage floors give a sense of dining in an old farmhouse. In the warmer months, there
are a few lovely tables outside on the sidewalk for alfresco dining.
The restaurant has one of the best wine cellars in Mendoza: between 450 wines from more than 80 different wineries.

The restaurant's own history book details 50 years of experience in Mendoza and reveals
some of the recipes of its famed homemade pastas. Octopus-like chandeliers hang from
the familial A-frame dining room, where guests can easily hear the creative voices of the
kitchen. Three pages of meat and fish follow on the menu, but you well may not have room
after the minestrone and pasta. An extensive selection of desserts is also available.

Grill Gourmet
The house was built by architect Daniel Ramos Correas and is "provincial historical monument” .
Therefore, it can’t be done structural changes.
That is exactly what 8 Cepas is doing, the new restaurant in charge of Max Casa (chef), in the
corner of Peru and Espejo, which has as a partners Cristián Bernal and Cristina Briggs.
The restaurant seats up to 50 people and it is open from Monday to Saturday only at night.

Set in a spruced-up mansion overlooking Plaza Italia that’s stayed faithful to the original
construction (retaining features such as vitraux windows and beautiful tile floors), Pablo
del Rio (Chef and owner) takes utmost care when it comes to sourcing ingredients for his
Argentine comfort food. The Serrano-style jamón crudo from Córdoba is excellent while

Six-steps gourmet menu
Nadia Haron, the Urban restaurant’s chef at O. Fournier, has just opened a new restaurant in
Mendoza.
This restaurant, Nadia OF, is situated in Chacras de Coria. The restaurant is open from
Wednesday to Monday at night (reservations required).
The restaurant keeps the same concept as the winery, with a six-course gourmet menu with
fixed prices.
Each Thursday the restaurant carries out a complete change of it’s the menu.
The restaurant Nadia O.F. is inside a traditional old house of Mendoza which has been completely renovated. There is a

The original house of Francisco Armando, founder of Los Toneles Winery. It was

The restaurant is formally open at noon. The cheff, Martita Abraham, who runs the kitchen,
also complements the
attention of the diners, explaining the dishes.
Tupungato Divino has not a conventional menu, but neither has a fixed menu. Each dish is
prepared with great care and diners are truly satisfied.
According to the season, the garden provides vegetables for the first course which are
combined in mousses, “cazuelitas”, and recently filled bread baked. For the main dish there
are several options: pork, chicken or vaccine sauce meat; handmade pastas with various
fillings: deer, salmon, asparagus or pumpkin and mozzarella.
The dessert consists of variety of sweet flavours and textures that complement each other in
a single dish.
