Purchasing a Half or Quarter Beef
Pricing
When purchasing our beef by the half or quarter animal, price is based on your animal’s hanging
weight. This is the weight of the carcass after slaughter and dressing but before butchering. The
cost of a quarter beef is $5.00/lb plus $25.00 in butcher fees; the cost of a half beef is $4.85/lb
plus $50.00 in butcher fees. On average, the hanging weight for a half beef is 335 lbs. For example,
if you were getting a half beef and the hanging weight was 335 lbs, your price would be $1,674.75
(335 x $4.85 + $50). The weight of the meat that you receive is approximately 55% of the hanging
weight. The loss is due to trimmings and bone scraps. If desired, your bones can be included for dog
bones or soup.
Cuts
The types and proportions of the various cuts will vary slightly from animal to animal. As a general
rule of thumb, you will receive approximately: 19% steaks, 17% roasts, 9% round cuts, 45% ground
beef and stew meat, and 10% miscellaneous cuts. If you are ordering a half beef, you can choose
your own cuts if desired. See the attached cutting instructions sheet, and feel free to give us a call
if you have any questions while filling it out. If ordering a quarter beef, you are welcome to fill out
the cut sheet and we will accommodate your requests to the best of our ability, but there may be
some variation.
Storage
A quarter beef will take up about 3 to 4 cubic feet of freezer space. This may fit in your kitchen
freezer if there is nothing else in it, so we recommend having an extra freezer.
How to order
If you are interested in purchasing a half or quarter beef, please fill out the order form and send it
in with a $200 deposit. We will notify you before we send your animal to slaughter. For those living
within 20 miles of the farm, we can deliver your meat free of charge, or you can pick it up here at
the farm on Steve’s Lane in Gardiner.
