4.Sanitary Standard for Canned Foods
DOH Drug No. 103816 Announced, 2/20/1976

1. Canned foods packed in metallic containers shall meet the following
requirements:
(1) Appearance:Shall not have swelling, rust, springer, flipper, or severe dent.
Others such as cutover, cut seams, sharp seams, false seams, uneven
seams, lips, droops, and irregular side seams, which may lead to leakage,
shall be avoided.
(2) Inner can wall:Shall not have severe detinning, lacquer falling,
blackening, or other abnormal discoloration.
(3) Food contents:Shall not have off odor or flavor, abnormal discoloration,
contamination, or foreign matter.
(4) Tolerance of pressure:No gas shall leak out after applying pressure to
inside of the cans for 3 minutes. For cans smaller than No.1 can, the
pressure is 1 Kg/cm2(15 lb/in2)
;for No.1 can and cans larger than No.1
can, the pressure is 0.7 Kg/cm2(10 lb/in2).
(5) Passes inspection by incubation test(37℃for 10 days)and free of
microorganisms capable of reproducing under normal storage conditions.
(6) The quality of seaming shall meet the requirements set in the CNS 827
National Standard for Round Metal Cans for Foods.

2. Canned foods packed in retort-pouch shall meet the following requirements:
(1) Appearance:Shall not have swelling, pin holes, filthiness, or other
defects.
(2) Sealing:Hot melt sealing shall be intact. The inner sides of hot melt
sealing shall not be mingled with food contents or contaminants.
(3) Tolerance to pressure and strength of hot melt sealing shall meet the
requirements set in the CNS 11210 National Standard for Retort-Pouched
Foods.
(4) Food contents:Shall not have off odor or flavor, abnormal discoloration,
contamination, or foreign matter.
(5) Passes inspection by incubation test(37℃ for 10 days)and free of
microorganisms capable of reproducing under normal storage conditions.
3. Canned foods packed in glass bottles shall meet the following requirements:
(1) Appearance:No defect of incomplete sealing, such as tilted cap or untight
sealing, etc., shall be found by external visual inspection.
(2) Food contents:Shall not have off odor or flavor, abnormal discoloration,
contamination, or foreign matter.
(3) Passes inspection by incubation test(37℃ for 10 days)and free of
microorganisms capable of reproducing under normal storage conditions.
