This unit standard is for people who are employed in packaging departments in meat processing plants and who are required to operate gas flushing equipment to produce gas flushed packaged meat products.
People credited with this unit standard are able to: describe the purpose of gas flushing meat products; carry out preoperational checks on gas flushing equipment; operate gas flushing equipment; package gas flushed meat products; demonstrate team-work; and comply with organisational and statutory hygiene and safety requirements.

Describe the purpose of gas flushing meat products.
Evidence requirements
1.1 The purpose of gas flushing meat products is described in terms of product spoilage and shelf life.
1.2 The principles of gas flushing meat products using CO2 are described in terms of pH levels and bacteria growth.
1.3 Gas flushing faults are identified and described in terms of product quality and corrective actions.

Carry out pre-operational checks on gas flushing equipment.
Evidence requirements
2.1 Pre-operational checks on gas flushing equipment are performed to manufacturer’s specifications and organisational requirements.
Range checks include but are not limited to – analyser, equipment trays, valves.
