I LOVE MY SALAD BERRY POACHED
PERFECT FOR BREAKFAST, LUNCH OR SUPPER
Tired of having the same old salad everyday for Lunch….? Then mix it up with this perfect combination
to excite your taste buds at any hour of the day!!! Complete with a single serving of vegetables and
packed full of fibre and protein goodness!!
INGREDIENTS:
1/2cup of mixed greens (spinach, Kale, Swiss Chards, etc.)
2 eggs
¼ of a yellow pepper
1/3cup of fresh blueberries and raspberries
1tablespoon of Blue Cheese
Fresh ground pepper to taste
This is how you create….
 Wash and spin dry ½ cup of mixed greens, and place on your plate
 Poach two eggs on top of your stove, to desired hardness
 While your eggs are poaching take ¼ of a fresh yellow pepper, wash and slice it into bite size pieces
place on top of your greens
 Rinse 1/3 cup of fresh blueberries and Raspberries and gently spin dry.
 Place berries on top of greens and peppers
 Keeping an eye on your eggs, when they have reached your desired consistency remove from water
and place on top of your greens, pepper and berry combination
 Top with 1 tablespoon of blue cheese crumbled and fresh ground pepper to taste
 Dinner is served…
SPECIAL NOTES:
GREENS … I enjoy this salad with a combination of greens such as, Spinach, Kale & Swiss Chards.
However this creation also works really well with just spinach if you don’t happen to have the other’s to
mix with it. Feel free to test it out with your favorite dark GREENS as well…
POACHED EGGS… this tends to take some practice if poaching in water… the use of a Mason Jar lid
works really well to keep the egg white contained and from floating all over your pot. There are
poaching devices available on the market to help and make this task easier for you… I personally use a
poaching pot… I find it extremely quick and easy allowing me to cook, eat and run in a matter of
minutes!!! Leaving your poached eggs soft, allows you to use the yoke as a type of dressing, requiring no
others!!
EXTRA PROTEIN…. Feel free to add in a sprinkling of almonds to up your protein and add a little bit more
