Brief course description
Introduction to the food as fuel. Reactions between the individual
components of food (carbohydrates, lipids, proteins, enzymes,
vitamins, coloring and flavoring substances, inorganic substances).
The biological role of individual active molecules in food. Sources of
biopolymers in food. Phytochemicals: polyphenols, terpenoids,
glucosinolates, phospholipids, vitamins, catehins.
