Brief summary of PI research / research group / centre activity (2 or 3 lines max):
Enzymatic hydrolysis of individual and composite food proteins is employed to generate
hydrolysates. These hydrolysates contain various bioactive sequences with potential to
beneficially modulate human health. In vitro bioassays are used to characterise and direct peptide
isolation and mechanism of action studies on enriched/selected peptide fractions.
