Procedure for Dishware Sanitizing
Rev. 5 12/11/14
1.
The machine for cleaning dishware and utensils is not a dishwasher but a
sanitizer.
2.
Rinse all food and/or food particles off of plates, glasses and utensils;
food/food items on items inserted in sanitizer will be “baked on” to the item(s),
will not be clean, and will have to be washed by hand to remove the food/food
particles.
3.
Load only one tray per cycle. Do not stack trays.
4.
Put in one (1) level tablespoon of dishwasher soap.
5.
Close door and press “On” button.
6.
Wait for water temperature to indicate 165⁰.
7.
Press “Wash” button.
8.
Display will indicate “Wash” and then “Rinse”. The cycle is complete when Dsplay
indicates “Sump Temperature” (approximately 90 seconds).
CAUTION: (190 Degrees) remains in the bottom of the machine when the
cycle is complete. This water will be only pumped out after the final wash
(see Step 10 below).
9.
If another load is needed, repeat steps 2-8 until all items are washed.
10.
When final wash is done, press “Off”. Wait until water is pumped out.
11.
When sanitizer has cooled off, open door and check screen in bottom of
machine for particles and clean if necessary.
