ALBUQUERQUE – Twenty five years ago, Jane Butel began her top rated all hands-on cooking
school, teaching week-long sessions in 1983 in Santa Fe, New Mexico. Ten years later, she built a
cooking school in Albuquerque, New Mexico. This school was selected in 1996 as one of the top four in
the world by “Bon Appetit” magazine. For the past three years, her school was awarded “Best in the US”
by Gayot.com for the Top Ten Hotel based Cooking Schools in the world.
The New Mexico sessions are now taught in Jane Butel’s Corrales kitchen. The remaining New
Mexico weekend and week-long sessions are set for July 13- 18, August 1-3, October 10-12 and
November 7-9, 2008. Corrales is a charming, historic village located between Albuquerque and Santa Fe.

The weekend classes feature traditional New Mexican cooking, history and lore about the
development of the cuisine as well as a detailed study of the major ingredients--chiles and corn. An indepth review of cooking techniques is presented in all of the classes. The week-long sessions additionally
include innovative New Mexican and Mexican favorites.
Hands-on Team Building and demonstration classes are also featured and are very popular with
corporate, club, and convention groups.

In celebration of the school’s 25th year, the School is launching “Cooking with Jane,” a monthly
subscription based Cooking Club. The pre-launch interest has been very good. Included in the club will
be a range of monthly features, including healthy cooking, quick and easy cooking, menus for a range of
meals, Southwestern and Mexican cooking, parties, snacks, and desserts as well as seasonal features.
There will be view on demand videos, downloadable recipes, specials on spices, products and classes.
An On-line school was successfully launched late last year, “All About Chiles” through the
University of British Columbia. In 40 lectures, a thorough review of the healthful aspects of chiles plus
over 160 tested, favorite recipes for cooking Southwestern, Tex-Mex, Mexican, Quick and Easy, Healthy
Cooking, Chilis and How to Create Your Own Recipes are taught. Accompanying the class are a
Discussion Board and a Chat Room.
The cooking school has been featured in such publications as Travel and Leisure Magazine, Good
Housekeeping Magazine and The New York Times.
