Tuna Casserole - (Day 2)
1 Box Penne Rigate Noodles (cooked)
1 Can Cream of Chicken Soup
1/2 Can Milk
1/2-Cup Frozen Peas
1 Cup Shredded Cheddar
2 Cans Solid White Tuna, Drained
Mix together all ingredients, Pour into casserole. Top with 4 slices of American Cheese & Crushed Corn
Flakes. Bake at 375 degrees for 30-35 minutes
Hamburger Hot Dish - (Day 5)
1 lb. ground beef
1 small onion chopped
1 15oz can tomato sauce
Salt, pepper, curry powder
1-pack juniorette spiral noodles
Brown ground beef, onion, salt, and pepper. Drain excess fat. Add tomato sauce and 2-3 tsp. curry
powder. Simmer 15-20 minutes. Prepare noodles, drain, and add to sauce. Bake in casserole at 300
degrees for 45 minutes.
Scrambled Eggs -(Day 4)
1 -11/2 eggs per child
Milk
Parmesan
Salt, pepper to taste (optional)
American cheese
Whisk eggs, milk, 1-2 tsp. Parmesan per serving. Scramble over med. heat 'till done. Remove pan from
heat. Lay American cheese on top till melted (covered).
Cheesy Bread - (Day 7)
Split a loaf of French bread lengthwise. Butter with light garlic butter. Top with shredded Mozzarella.
Broil till melted and bubbly. Cut into pieces and serve with warm spaghetti or pizza sauce for dipping.
Monkey Bread - (Day 11)
4 tubes of refrigerator biscuits
Cinnamon sugar
Cut each of the 40 biscuits into 4 pieces with kitchen scissors. Roll each piece in cinnamon sugar. Toss
into sprayed 9x13 pan. Bake at 400 degrees 15 minutes or till firm. Let stand 10 minutes before serving.
Cut like a cake into squares.
Taco Plate - (Day 10)
Spread individual small plates with mixture of browned hamburger and refried beans. Top with shredded
cheddar or mozzarella. Microwave till warm. Top with choice of shredded lettuce, tomatoes, peppers,
and olives. Serve with warm tortilla chips, or pita bread for younger children.
Lemon Chicken - (Day 9)
Cut boneless, skinless, chicken breasts into bite-size pieces. Stir-fry over hot flame in non-stick pan or
wok using chicken broth instead of oil. The last few minutes of cooking add lemon juice and small
amount of black pepper. Continue to stir-fry till all liquid is gone.
Chili - (Day 8)
1lb browned ground beef
1 can Chili Magic (a mixture of beans, sauce, & seasonings)
1 can diced tomatoes
Mix all ingredients and simmer for 20 minutes.
