
A food allergy is when your body’s immune
system reacts to a food protein because it has
mistaken that food protein as a threat.
◦ An allergy is not the same as an intolerance

As many as 15 million Americans have food
allergies
◦ 1 in 13 children has a food allergy = about 2 per
classroom, on average

8 foods account for the majority of reactions
◦ Milk, eggs, peanuts, tree nuts, soy, wheat, fish
and shellfish
6

Strict avoidance of the food allergen is the only way to prevent a
reaction.

An allergic reaction to food can have many different symptoms.

Even trace amounts of a food allergen can cause a reaction in
some people with food allergies.

◦ Anaphylaxis is a serious allergic reaction that comes on quickly
and may cause death.
◦ A single person can experience different symptoms from one
reaction to the next.
Although ingestion is the primary cause of severe reactions, in
some cases, skin contact or breathing in a food protein (e.g.,
steam from cooking eggs or shellfish) can cause symptoms.
7

Under Section 504 of the Rehabilitation Act of
1973, and the Americans with Disabilities Act
(ADA) of 1990, a "person with a disability" means
any person who has a physical or mental
impairment which substantially limits one or more
major life activities, has a record of such an
impairment, or is regarded as having such an
impairment.
◦ The term "physical or mental impairment" includes
many diseases and conditions, including food
anaphylaxis (severe food allergy).
8

Students should not be excluded from school
activities solely based on their food allergy. Find
safe and inclusive ways to celebrate.
◦ Use non-food incentives for prizes, gifts, and awards.
◦ Avoid the use of identified allergens in class projects, parties,
arts, science experiments, cooking, etc.

Planning Events: Consider Non-Food Options
◦ 3-point checklist:
 1. What is the goal of the event/activity?
 2. Can this goal be achieved without food?
 3. If not, how can we choose foods that will allow everyone
in our school community to fully & safely participate?
