Kabsa
As one of the most popular and traditional Arabic dishes and of
course being the national dish of Saudi Arabia, Kabsa is widely
available across the country from Jeddah to Riyadh. You can
definitely sample this dish at fine dine restaurants and food courts.
Meat for kabsa can be cooked in various ways. A popular way of
preparing meat is called mandi. This is an ancient technique that
originates in Yemen, whereby meat is barbecued in a deep hole in
the ground that is covered while the meat cooks.
HOW SHOUD WE
EAT KABSA
Serve Al Kabsa with a fresh mixed cucumber, carrot, lettuce, and
tomato salad -- preferably with a little lime vinaigrette. Some fresh
pita bread on the side would be nice also. Saudis like their Kabsa
with a hot sauce called 'Shattah'. And of cource by hand
