Purpose
People credited with this unit standard are able to: prepare to pack poultry
products in atmosphere-modified packs; operate the atmospheremodification packing machine; handle contingencies that occur while packing
poultry products in atmosphere-modified packs; and lid and/or label
atmosphere-modified packs of poultry products.

Definitions
Atmosphere-modified packs refers to vacuum packs.
Throughput refers to rate at which product is produced by hour or production run.

Competence is to be demonstrated on at least three occasions of packing products in
atmosphere-modified packs.
Elements and performance criteria
Element 1
Prepare to pack poultry products in atmosphere-modified packs.
Performance criteria
1.1
The packing preparations include the identification of the products to be packed,
and confirmation of the use of atmosphere-modified pack liners in accordance
with the company operating procedures.
1.2
The packing preparations include setting up and starting the atmospheremodification packing machine in accordance with the company operating
procedures.
1.3
The packing preparations include setting up and starting the atmospheremodification packing machine in accordance with the company safety policies
and procedures.
Element 2
Operate the atmosphere-modification packing machine.
Performance criteria
2.1
The atmosphere-modification packing machine is operated in accordance with
the company safety policies and procedures.
2.2
The atmosphere-modification packing machine is operated in accordance with
the company quality assurance policies and procedures.
2.3
The atmosphere-modification packing machine is operated in accordance with
the company operating procedures.
2.4
The atmosphere-modification packing machine is operated in accordance with
the company production throughput requirements.

Element 3
Handle contingencies that occur while packing poultry products in atmosphere-modified
packs.
Performance criteria
3.1
Contingencies are handled in accordance with the company operating
procedures.

3.2

Lid and/or label atmosphere-modified packs of poultry products.
Performance criteria
4.1
The packs are lidded and labelled in accordance with the company operating
procedures.
4.2
The lids and labels are consistent with the product specifications, and the
product in the pack.
Please note
Providers must be accredited by the Qualifications Authority, or an inter-institutional body
with delegated authority for quality assurance, before they can report credits from
assessment against unit standards or deliver courses of study leading to that assessment.
Industry Training Organisations must be accredited by the Qualifications Authority before
they can register credits from assessment against unit standards.
Accredited providers and Industry Training Organisations assessing against unit standards
must engage with the moderation system that applies to those standards.
Accreditation requirements and an outline of the moderation system that applies to this
standard are outlined in the Accreditation and Moderation Action Plan (AMAP). The
AMAP also includes useful information about special requirements for organisations
wishing to develop education and training programmes, such as minimum qualifications for
tutors and assessors, and special resource requirements.
