Classification Dairy Manufacturing > Dairy Technology Available grade Achieved Explanatory notes 1 Work must be carried out in accordance with organisational requirements, licensing requirements, legislative requirements, and industrial awards and agreements. 2 Workplace information can include Standard Operating Procedures, specifications, production schedules and batch/recipe instructions. 3 Materials include product and packaging consumables. 4 Packaging and related equipment can include automatic palletisers, scales, labellers and other automated packing equipment. It includes hot and cold packing methods. 5 Monitoring the process may involve the use of production data such as performance control charts. 6 This unit standard is Process set up, operation andexpiring monitoring functions may be manual or involve the use of a process control system. 7 Control points refer to those key points in a work process which must be monitored and controlled. This includes food safety (critical), quality and regulatory control points as well as inspection points. 8 Legislative requirements include but are not limited to the Animal Products (Dairy) Regulations 2005, Animal Products Act 1999, Food Act 1981, Food (Safety) Regulations 2002, Australia/New Zealand Food Standards Code 1.2.3 and 1.2.4, and subsequent amendments. 9 Organisational requirements refers to instructions to staff on policy and procedures which are documented in memo or manual format and are available in the workplace. These requirements include but are not limited to – site specific requirements, and company quality management requirements. Evidence requirements 1.1 Workplace information is accessed to identify production requirements for packaging. 1.2 Materials and services necessary to the packaging process are confirmed and available to meet production requirements. 1.3 Packaging equipment is checked in terms of status, condition and readiness for use. 1.4 The packaging equipment is set to meet production requirements. Range setting could include but is not limited to – equipment to meet packaging and/or stacking requirements, variables such as weights, batch codes, expiry dates. Outcome 2 Operate and monitor the packaging equipment. Range monitoring could include but is not limited to – levels of materials and/or consumables, visual inspection of packaging quality.
