Definitions
Organisational requirements refer to instructions to staff on policy and procedures,
which are documented in memo and/or manual format and are available in the
workplace. These include but are not limited to site-specific and company standard
operating procedures (SOP), occupational health and safety, food safety and quality
management requirements.
Distillation equipment refers to silos, pipe work, pumps, heating and cooling plant,
monitoring and control equipment.
Materials refer to crude dairy products such as whey.
Processes refer to batch or continuous and apply to single or multiple product
specifications or types.

Legislation and standards relevant to this unit standard include the Animal Products
Act 1999; Hazardous Substances and New Organisms Act 1996; Health and Safety
in Employment Act 1992; Land Transport Rule: Dangerous Goods 2005;
NZS 5433:1999 Transport of dangerous goods on land.
Elements and performance criteria
Element 1
Prepare the distillation, stripping, and rectification equipment for operation in a dairy
processing operation.
Performance criteria
1.1
Materials meet operating requirements.
1.2
Cleaning and maintenance requirements and status are identified and
confirmed according to organisational requirements.
1.3
Plant components and related attachments are fitted and adjusted to meet
organisational requirements.
1.4
Processing and/or operating parameters are adjusted as required to meet
safety and organisational requirements.
1.5
Equipment performance is checked and adjusted according to organisational
requirements.
1.6
Pre-start checks are carried out to meet organisational requirements.
Element 2
Operate and monitor the distillation, stripping, and rectification process in a dairy
processing operation.
Performance criteria
2.1
The distillation, stripping, and rectification process is started and operated
according to organisational requirements.
2.2
Equipment is monitored to identify variation in operating conditions according to
organisational requirements.
2.3
Variation in equipment operation is identified and maintenance requirements
are reported according to organisational requirements.
2.4
The process is monitored to confirm that rectification product meets distillation
specifications according to organisational requirements.
2.5
Out-of-specification product and/or process outcomes are identified and
rectified or reported to maintain the process within specification, according to
organisational requirements.

requirements.

The distillation, stripping, and rectification process is shutdown according to
organisational requirements.
3.3
Maintenance requirements are identified and reported according to
organisational requirements.

Providers must be accredited by NZQA, or an inter-institutional body with delegated
authority for quality assurance, before they can report credits from assessment against
unit standards or deliver courses of study leading to that assessment.
Industry Training Organisations must be accredited by NZQA before they can register
credits from assessment against unit standards.
