Grits Souffle
A Palmetto Favorite
1 cup raw grits
3 eggs, separated
1 stick butter
Worchester sauce to taste
1 cup sharp Cheddar cheese
1 teaspoon salt
Garlic to taste
Cook grits as directed on package. To hot, cooked grits, add butter cheese, beaten egg yolks, and all
seasonings. Fold in stiffly beaten egg whites and pour into greased casserole pan (about 2/3 full).
Bake 30 minutes at 300º F. Serve while hot. May store in refrigerator to heat and serve later.
Serves 6.
