Working Title : Food Service Manager
Position Summary:
The Food Service Supervisor is responsible for the overall food service program at the Central Wisconsin Environmental
Station. Responsibilities include supervision of food service staff, scheduling staff, preparation of menus for all visiting
groups, maintaining food inventory, ordering foods, maintaining and creating recipes, cooking, baking, serving, and
cleaning. In the summer, the kitchen serves undergraduate students during a field experience course, and then serves
youth ages 6-17 for residential camps Sunday-Friday. During the school year, the kitchen provides food service for
visiting school groups, adult contract groups, and hot and cold lunches for an on-site charter school. Lunches and dinners
typically include a meal and full salad bar along with dessert. Weekend and evening shifts are required and shared with
other food service employees.

Provision of Food Services
Meet food service standards according to the State of Wisconsin and DHS 175 for
recreational and educational camps
Order food from multiple vendors to meet menu requests
Receive food orders and maintain constant food inventory
Develop menus for visiting groups
Create recipes for meals, soups, desserts, etc.
Design monthly menus for charter school and weekly menus for summer camps
Maintain updated ingredient lists
Develop gluten free, dairy free, vegan, and other dietary meal options for visitors
Incorporate local and organic foods in a food service program, including use of food
on-site garden
Work closely with CWES management team on scheduling and planning for groups
Coordinate student and kitchen staff
Schedule a variety of staff to meet food service needs
Supervise and train part-time and student employees
Demonstrate new techniques and communicate new policies effectively to food service
staff for quality food service preparation and delivery
Clean and supervise cleaning of kitchen and dining hall according to standards

5 years kitchen/supervisory experience required
Certification as a food manger, or ability to obtain certification
Computer skills including email, Microsoft word and excel
Strong customer service skills
Experience supervising others
Ability to develop a thorough understanding of University of Wisconsin and UWSP administrative policies /
procedures
Understanding of the University & department environment, its mission, and operational needs
Excellent interpersonal skills, including tact, diplomacy and flexibility
Must be able to communicate effectively, both verbally and in writing, with supervisors and managers, staff, coworkers, campus staff, and interact positively with service providers outside the university
Ability to organize and manage competing demands and priorities
Creative, flexible, self-motivated, and quality oriented
Ability to work on three shifts including weekends, holidays, on-call and emergencies
Ability to maintain a valid Wisconsin driver’s license (regular, Class D License)
